Taste of Texas BBQ and B.M.W. Catering LLC was conceived through the meeting of two hearts. In 2000 Bruce and May discovered that they had common values, goals, and a shared passion for creating, preparing, and sharing food with others.Both Bruce and May were raised in families associated with the food industry. Bruce’s parents (both deceased) owned and operated Barbecue restaurants in Texas and Colorado. People would travel 200 miles in Texas to be at his parent’s restaurant before it opened to insure that they had BBQ for the weekend. May’s mother retired after 30 years as a Nutrition Aide Supervisor and her father retired from USDA as a Meat Grader. Bruce and May grew up learning about healthy and safe food preparation techniques and family gatherings always included some type of culinary experience.
Bruce has been perfecting his skills as a pit master for 40 years. One of his lifelong ambitions has been for his BBQ to be as good as his father’s. His mother and favorite Aunt assured him in 2008 that he had met and possibly surpassed his father’s excellence. Bruce learned his unique style of slow cooking meats from his father. All of his smoked meats are cooked with indirect heat in a smoker, using charcoal and Mesquite wood. His meats have a sweet and light smokiness that enhances the flavor of the meat, without overpowering it. The low temperature and long hours break down the meat to a succulent tenderness. Bruce is best known for his briskets, but he can turn any meat into a finger-licking masterpiece. Taste of Texas prides itself on the flavor of its meat and uses their original BBQ sauce as a condiment.
May has skill with a grill, but leaves the BBQ (indirect heat) technique to her husband. May’s experience as a Food and Nutrition Educator in DPS for nearly 30 years has given her the opportunity to create numerous recipes. Her side dishes have a unique southern flair to them. May has created her own seasoning that she uses for a majority of her dishes. Her sides are a perfect complement to her husband’s BBQ. Vending is a growing part of this catering enterprise. Plans for the future include May retiring and the Catering business becoming full time. Vending opportunities in the State of Colorado would be only the tip of the iceberg. “We want to take this show on the road”, says May. Motorcycle rallies, Race car events, Concerts, Festivals, BBQ competitions, Rodeos, Fairs, and other events that will allow us to make money, meet good people, share our product with the public, and do what we love, cook. Catering is a large part of their business. Bruce and May continue to cater to the needs of all. As B.M.W. Catering LLC, Bruce and May are capable of providing an elegant meal for a wedding, food based on a theme for a party, and different cultural delights. They have experience cooking Greek, Italian, Southern, Jamaican, and other ethnic foods. All of their catered meals are served buffet style. The client decides if the event is to be formal or informal. There are 2 menus used by the company. One of them is exclusively BBQ. The pricing is competitive and reasonable. Organized, timely, and efficient service is a priority. They pride themselves on always supplying the customer with friendly, loving service and food of high quality. There is an ample amount of each food item ordered for the guest, plus enough for 3 to 5 extra people, depending on the event.
